Cookie Monster Joy – Getting Ready for the holidays with Gluten Free Baking – the NPR Insight Segment

Gluten Free Goddess’s Buckwheat Chocolate Chip Cookie recipe:

Trying something new & want to save time & money? Use an all purpose flour. Replace 2 1/2 cups of flours & xanthan gum (1 cup buckwheat, 1 cup sorghum, 1/2 cup starch & 1 1/2 tsp of xanthan gum) with 2 1/2 cups of Pure Pantry Buckwheat Pancake & Baking Mix.

Additional modifications made by me. 1 cup vegan shortening or coconut oil. Replaced with 2/3rd cup soy free earth balance, 1/3rd cup coconut oil).

1 tbsp honey. Replaced with 1 tbsp rice syrup (this can be done if baking for young children).

Also used dark chocolate chips, 1/2 cup of dried cranberries (soaked in warm water) and 1/4 cup of macadamias.

 
Easy XO Brownie Mix
 
modifications: 
1 tbsp of water, replaced with 1 tbsp of coconut milk
1/2 cup of butter replaced with 1/4 cup earth balance soy free buttery spread & 1/4 cup coconut oil
 
additions before baking:
1/2 cup crofters jam warmed in a pan and drizzled onto brownies before baking.
 
after 10 minutes of baking, add shredded coconut to your liking on top and bake another 12-20 minutes
