Need Beef Consommé for your favorite recipe?

It’s currently nearly impossible to find a beef consume ready to go that is gluten free in the US. For this reason, we offer you this recipe:

3 quarts chilled beef bouillon or stock
1 ½ pounds ground beef (free from fat)
1 carrot
2 leeks
2 celery stalks
2 egg whites
parsley & thyme
dash of salt

a few peppercorns

Chop carrot, leeks and celery stalks, salt, peppercorn & herbs  

Place in a large pot


add ground beef & chilled stock

Lightly beat 2 egg whites with a fork or whisk

Add to stock & veggie combo

Bring the pot slowly to a boil CONSTANTLY STIRRING until only a few bubbles break the surface. 
At a slight boil when the raft begins to form in the pot, stop stirring. 
Continue to simmer slowly for an hour to an hour and a half. 
Wait a few minutes & then skim the residual matter on the top & discard it.
